This tomato couscous bowl is perfect for meal prepping and packing up for lunches. All of the components are so fresh and great on their own, but somehow taste even better when combined together in a bowl. Instead of couscous, you can use brown rice, quinoa, kamut, or buckwheat for this deliciously healthy and wholesome summer bowl.

Dressing

  • 300 ml Tomato juice
  • 1/2 tsp Ras el hanout (or garam masala)
  • 100 g Couscous
  • 200 g Sugar snap peas (or snow peas)
  • Olive oil
  • Salt and pepper
  • 2x125 g Salmon fillets
  • 1 tbsp Butter
  • 80 g Leafy greens (purslane, spinach, arugula or lamb's lettuce)
  • Cilantro leaves
  • 1/2 Red onion, sliced into rings
  • A handful of blackberries
  • 1 tbsp Pomegranate seeds

  • 2 tbsp Pan juice from frying salmon
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste

  1. Place tomato juice and ras el hanout in a saucepan and bring it to a simmer. Stir in couscous, cover and leave to stand for 10 minutes, then stir with a fork to break up any clumps.
  2. Remove the end stems and the strings of each pod. Rinse and dry them. Add a tablespoon of olive oil in a skillet over medium-high heat. Add in sugar snap peas and sautee for 3-5 minutes until crisp-tender. Season with salt and pepper.
  3. Season the salmon with salt and pepper. Heat a tablespoon of olive oil and a tablespoon of butter in a skillet over medium-high heat until very hot. Add in seasoned salmon fillets, with the skin down, and cook, undisturbed, for 5 minutes until crispy and browned.
  4. Flip the salmon over and lower the heat to medium. Cook the remaining 3 sides until the fish is cooked through, 3 more minutes.
  5. Whisk together the pan juice, olive oil, lemon juice and mustard in a small bowl. Season with salt and pepper.
  6. To serve, divide the tomato couscous into two bowls. To each bowl, add the leafy greens, cilantro, onion rings and snap peas and top with a pan fried salmon fillet. Garnish with blackberries and pomegranate seeds. Drizzle the prepared dressing over.

Best VideosCarrot Mango Salad with Date Dressing SISGUFANG

© 2022 | http://angiesrecipes.blogspot.com

© 2022 | http://angiesrecipes.blogspot.com

Serve this light, vibrant carrot, mango and fresh herb salad with a date dressing for a simple lunch or side dish. For the date dressing, I used Persian-style Feta, which is made from cow's milk, but you can replace with Greek variety, which is made from sheep's and goat's milk. Make a huge batch of this healthy salad to keep in the fridge as it makes the perfect accompaniment to your grill feast, but sprinkle the nuts over the salad right before serving, so they will stay crispy. Kaloute / kalute / kali dates are a type of fresh dates or wet dates with a soft meaty texture in Iran, similar to fresh mazafati dates. They're not strictly "fresh" as they have dried a little and darkened on the skin. The dried dates are great for the dressing too, but soak them first in hot water before mixing with other ingredients.

For the perfect combination of sweet and salty, you can't go past this watermelon, blueberries and feta salad with cumin maple syrup vinaigrette. Serve this vibrant salad that's bursting with flavour, colour and nutrients, as a side to your favorite protein dish (we enjoyed it with a bone-in, skin-on pork shoulder roast flavoured with fennel) for the ultimate summer feast. It's refreshing, deliciously healthy and a perfect dish for entertaining. The sweetness of watermelon and Gorgonzola would make a great combination too if you prefer a stronger flavour of cheese or ricotta if you want a milder variety.

DressingSalad

  • 1 Lemon, juiced
  • 4 tbsp Olive oil
  • 1 tsp Maple syrup
  • 1/2 tsp Freshly milled cumin
  • Salt and black pepper to taste

  • 1 Mini watermelon, cut into triangles
  • 100 g Feta, crumbled
  • Mint, chopped
  • 100 g Blueberries
  • 1 tsp Black sesame seeds

  1. Whisk freshly squeezed lemon juice, olive oil and maple syrup in a small serving bowl. Season with cumin, salt and pepper.
  2. Wash and dry the watermelon. Cut the clean watermelon into triangles, about 2cm thick. Arrange watermelon on a large serving platter with blueberries and chopped mint. Drizzle some prepared dressing over. Crumble feta over the salad and sprinkle the black sesame seed over.
  3. Serve as an easy appetizer, a light snack or as a side to your favourite source of protein, such as meatballs, chicken wings, steak, salmon, or pork roast.

Best VideosDandelion Salad with Bacon, Egg and Parmigiano Reggiano SISGUFANG

© 2022 | http://angiesrecipes.blogspot.com

© 2022 | http://angiesrecipes.blogspot.com

© 2022 | http://angiesrecipes.blogspot.com

A freshly picked dandelion salad is one of the joys of spring, made with crispy bacon, boiled eggs and the 30-month Parmigiano Reggiano, that help smooth the strong and assertive bitterness of danelions and characteristically bitter edge of radicchio. You could use all dandelions if you prefer or substitue baby spinach or arugula greens. Besides bacon, salami or other sausages are great for this salad too.

SaladDressing

  • 8 slices Bacon
  • 4 Eggs, boiled to your liking
  • 100 g Dandelion greens
  • 100 g Radicchio, thinly sliced
  • 30-month Parmigiano Reggiano

  • 1 Shallot, minced
  • 1 tbsp Hazelnut oil
  • 1 tsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 50 ml Homemade broth
  • Salt and freshly milled black pepper

  1. In a medium skillet over low heat, cook bacon until brown and crisp, 5 to 8 minutes. Using a slotted spoon, transfer bacon to a paper towel, reserving fat.
  2. Return the skillet to the heat, add the minced shallot and sauté, stirring occasionally, for a minute, until slightly softened. Add the hazelnut oil, mustard, vinegar and broth and stir for about 1 minute, until bubbling and just the slightest bit reduced, scraping up the browned bits from the bottom of the pan. Taste and season.
  3. Meanwhile boil the eggs in boiling water for about 8 minutes for hard-boiled eggs. Drain and rinse egg briefly under cool water until cool enough to handle. Peel and cut the egg in half.
  4. Toss the dandelion greens and radicchio with salad dressing. Arrange on serving plates with the eggs, bacon and shave some Parmigiano-Reggiano over. Serve immediately.
